 - Tomato And Sauerkraut Salad

A light, tasty summer salad that's perfect with fresh ripe tomatoes.

3 1/2 cups Schroll's sweet sauerkraut, drained
2 tomatoes, cut in wedges
2 small onions, chopped
2 tablespoons chopped parsley
1/4 green pepper, cut in small strips
4 tablespoons salad oil
1 1/2 tablespoons vinegar
1/2 teaspoon black pepper

Combine all ingredients in a salad bowl and toss lightly. Chill until ready to serve. This salad keeps for several days, andis best when refrigerated for at least 24 hours.
